Delicious Spanish Cauliflower Dishes: Healthy & Flavorful Recipes to Try

Spanish cuisine is renowned for its bold flavors and fresh ingredients. While many people associate Spain with paella, tapas, or churros, there are numerous delightful dishes featuring cauliflower - a versatile veggie that shines in various preparations.

One of the most popular Spanish cauliflower recipes is crema de coliflor, also known as cauliflower soup. This comforting dish showcases the vegetable's natural creaminess when pureed, creating a velvety texture without the need for heavy dairy.

Ingredients:

  • 600g cauliflower
  • 150g onion
  • 2 cloves of garlic
  • 30ml olive oil
  • 480ml vegetable broth
  • Salt and pepper to taste

To make this simple yet delicious soup, start by chopping the onion and garlic. In a large pot, heat the olive oil over medium heat and sauté these aromatics until softened but not browned.

Add the cauliflower florets to the pot, stirring occasionally for about 5 minutes so they’re nicely coated in flavors. Then pour in the vegetable broth. Season with a pinch of salt and pepper, bring to a boil, then reduce heat, cover and let it simmer until the cauliflowers are tender.

Once done, blend the mixture until smooth using an immersion blender or transfer it to a regular blender for smoother texture. Return it back to the pot if needed, adjust seasoning, and serve warm. You can garnish with toasted breadcrumbs or fresh parsley.

Another traditional Spanish dish is coliflor al ajillo, or garlic cauliflower. This flavorful side dish is perfect for meat-loving Spaniards who appreciate a good bit of garlic.

Ingredients:

  • 500g cauliflower
  • 6 cloves of garlic
  • 30ml olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)

To prepare this dish, cut the cauliflower into small florets. Mince the garlic finely or use a garlic press for convenience.

Heat olive oil in a large skillet over medium heat and add minced garlic. Cook until fragrant but not brown. Add caulifloret to the pan, season with salt and pepper, and if using, sprinkle paprika for added color and flavor.

Toss everything together and cook covered on medium-low, stirring occasionally, until the cauliflower is tender yet slightly crispy in places. This usually takes about 15 minutes but depends on the size of your florets.

Serve this dish as a side, or pair it with a main protein like grilled chicken or fish.
